A slightly leaner and tougher cut than the Top Sirloin steak and is from the Round section of the steer. Because it is lower in fat, similar to a Round Steak, we recommend mirinating for at least 2-4 hours before cooking and never cook more than medium to avoid toughness.  


This same cut is also available in a roast.
